Honey Ginger Cookie Recipe

 
 
 

It’s almost time for the holidays! I absolutely love the smell of fresh baking throughout the house. I tend to indulge without too much guilt over the holidays, but I do love to look at healthier alternatives whenever possible. There are so many times where there is not a healthy dish in sight, so it’s nice when you can satisfy your holiday sweet tooth without the added sugar. After experimenting with a few recipes, this Honey Ginger Cookie is a winner!

Recipe:

  • 1 ½ cups of oat flour

  • ¼ tsp baking soda

  • 1 tsp cinnamon

  • 1 tsp ground ginger

  • ½ tsp ground cloves

  • ¼ tsp salt

  • ¼ cup melted coconut oil

  • ¼ cup honey

     

  • Preheat your oven to 350° F

  • In a large bowl, combine all dry ingredients

  • In a small bowl, combine melted coconut oil and honey

  • Slowly pour the wet ingredients into the dry ingredients and stir until combined

  • Place the dough in the refrigerator for 20-30 minutes (you do not want the dough to be warm)

  • Form the dough into 12 evenly sized balls on a well-greased baking sheet (the cookies will not rise too much so ensure they are not too flat)

  • Bake for approximately 8-10 minutes
